Austin and I bought TONS of chicken a couple weeks ago cause it was on sale, and I've been struggling to use it all. So this is what I found for dinner last night, it's so easy and fast, and we loved it!
2 1/2-3 pounds of chicken pieces (breast halves, thighs, drumsticks)
1 tsp. finely shredded lime peel
1/4 cup lime juice
1 T. cooking oil
2 cloves garlic, minced
1 tsp. dried basil
1 tsp. black pepper
1/4 tsp. salt
1) Place the chicken pieces on an unheated broiling rack and broil 4 to 5 inches from the heat for 20 minutes.
2) Meanwhile, for the glaze, stir together lime peel, lime juice, oil, garlic, basil, pepper, and salt. Brush chicken with the glaze, turn, and brush again. Broil for 5 to 15 more minutes, glazing periodically, especially during the last 5 minutes.
We had it with some homemade Guacamole and whole grain tortilla chips, it was delicious! =)

Shrimp Pesto Pasta (5 pts)
This was an experimental dinner that turned our really well! I even used a HUGE bag of spinach and everyone still loved it. Each serving is close to a cup and a half.
Ingredients:
-16 oz. cooked, de-veined shrimp
-frozen spinach (as much or as little as you want)
-Pasta (of choice- I used "Smart Pasta")
-Packet of Pesto Mix
1. Cook Pasta. Mix in pesto mix, and 3 tbsp. Olive oil + water to equal one cup.
2. Sautee spinach and shrimp in chicken broth. Drain.
3. Mix it all together!
**I also added some onion powder, salt, pepper, and minced garlic.
